Changes in hepatic thiol contents and regulation of glutathione S-transferase by high-fructose diet: Effects of kefir and some probiotic bacteria

In this study, thiol/disulfide homeostasis in the liver tissues of high-fructose-fed rats was investigated conjunction with changes main hepatic detoxification enzyme, glutathione S-transferase (GST). Additionally, effects well-known probiotics namely Kefir, Lactobacillus helveticus, and plantarum supplementation on thiol/disulfate contents GST activity gene expression levels were analyzed. Fructose, administered as a 20% solution drinking water for 15 weeks, developed an animal model metabolic syndrome male Wistar rats. High fructose augmented but GST-Mu isoform. helveticus activity, respectively. These results demonstrated shift toward formation fed high fructose. A possible reason would be increase that uses free glutathione, source cells, substrate. Besides, such have improving effect well enzymes.
